
Zucchini Salad
Serves 1
1 Small zucchini
2 cups of lettuce - the darker the better
1 1/2 cup riced cauliflower
Spices - I used Spike
Lemon juice
Dressing - recipe below
1. Cook the cauliflower and set aside
2. Slice zucchini into rounds
3. Over medium high to high heat lightly sauté the zucchini until just a few brown spots appear and season with the spice of your choice. The high heat is key to add some caramelization yet keep the crispness of the zucchini.
Serve: Top the riced cauliflower with the lettuce and then the zucchini and add lemon juice and spice or dressing.
The 7 Day Healthy Cleanse recommends having a salad with full fat at dinner. I find that if I have it at lunch the fat helps me stay more satisfied and make it through the day. You may choose to add dressing or omit and use lemon juice and spices.
Dressing
3 parts oil
1 part acid (vinegar, balsamic vinegar, lemon or lime juice, etc.)
1 clove garlic
Favorite spices, I used spike.
This is a good base for dressings. You can add dijon mustard, sun dried tomatoes, herbs, etc. once you have the base.
