For snacks I love crispy chickpeas.
Drain a can of chickpeas and rinse, then pat dry. Toss with a little olive oil (about a tablespoon), or your favorite oil. Keep in mind that certain oils have a distinct flavor that will impact your finished dish, like coconut oil. Toss with your favorite seasonings (you can do this at the end if you prefer). Bake 40-60 minutes. Test half way through, they are done when nice and crispy and a little golden, but not dark brown. I like za'atar seasoning on mine or smoked paprika and a little salt and pepper. #chickpea #healthy #vegan #vegetarian #meatlessmonday #wfpb
